Food is always joyful

Because you cannot live life without food I thought I would share a recipe or two that we love!

Blackened Chicken Salad for two:
  • Mixed greens
  • 1 avocado - dice and squeeze half a lime over
  • 2 chicken breast
  • 2 tablespoons of butter
  • Zatarans Blackening seasoning - brush butter on your chicken and then sprinkle the seasoning all over, let sit for 15 minutes, heat up a cast iron pan or frying pan on high heat, cook 3-5 minutes on each side.
  • Creamy Cilantro Dressing - 2 tablespoons freshly chopped cilantro leaves
    1 tablespoon red wine vinegar
    1 teaspoon lime zest
    1/4 cup lime juice
    1/2 cup sour cream ( i like to use about 1/4 cup )
    1 clove garlic, smashed
    1 tablespoon honey
    1/2 cup extra-virgin olive oil
    Salt and freshly ground black pepper
  • Assemble salad and enjoy :)
